Documentation

Updated the main README with a new banner image and changed the title to "Astral Block Explorer".
Updated the explorer README with a new banner image and changed the title to "Autonomys Block Explorer Frontend".
Updated the indexers README with a new banner image, changed the title to "Autonomys Indexers", and modified the description to reflect the use of SubQuery indexers.
Revised the indexers' setup instructions to use yarn commands instead of Docker.
