As you mentioned in the introductory text, the focus of the data is on the Western US. This is also reflected in the swath chosen from the Copernicus imagery. Changing the extent of your plot to better match the spatial extent of your data would make it easier to understand the features in the plot.

I changed the extent to zoom in on California.
