Bump nth-check and gulp-imagemin #153

This PR, specifically the update of gulp-imagemin, results to an issue on the build process.

Error [ERR_REQUIRE_ESM]: Must use import to load ES Module:

We will get back to this when time permits but for now let's keep the current version as there is no immediate reason to update.
