chore: remove auto-generated doc files from .gitignore #30

Description of changes: Customers should be able to view the auto-generated documentation files based on the resource schema. These files are currently included in the .gitignore file. This change removes the docs from .gitignore, then adds the files generated by running cfn generate for each of statemachine and activity.
