Document the process of upgrading ACK controllers #1432

Currently, we only provide documentation on how to install controllers, but not how to upgrade them. Even though the process sounds straightforward, it might get complicated and messy and sometimes ACK users might face some delicate issues to solve, especially when it comes to CRD/CR updates.

Let's meticulously document the process of upgrading a controller (either locally or by using helm))

On a similar note, @ShacharMalachi brought some very good ideas on how to improve this experience using a helm installCRDs value, that we can include in these docs as well.
