Major updates to Bedrock workshop from the BR workshop v2 branch

Description of changes:

• major changes to workshop structure. Now contains 6 buckets of labs:
  • Simple Text Generation
  • Knowledge bases
  • Model customization
  • Image and Multimodal
  • Agents
  • Open source examples
• Bedrock samples will now host deeper dives/broad examples, with BR workshop repo (this one) hosting main entry level labs
• TODO:
  • Update workshop studio repo (Ongoing)
  • Decide on newly launched models
