Description of changes:

Upgraded postgresql deprecated engine version from 13.6 to 13.7 in the lab1.template

@brtrvn please update the lab1.template in s3://aws-saas-factory-serverless-saas-workshop-us-west-2. README instructions use workshop.template from s3 and it still has the old version.
