Knowledge base embedding titan model change v2 from v1.

Why the solution needed

Knowledge base embedding titan model is now v1. titan embedding model v2 is generally more accurate than v1.

Implementation feasibility

'titan_v1' change to 'titan_v2' in each files.
BedrockFoundationModel.TITAN_EMBED_TEXT_V2_1024 use in bedrock-knowledge-base-args.ts
