Adjusting datadog operator variable as per Infra Eks Blueprint Repo #126

Issue #125

Enable variable for datadog operator is different in infra eks blueprint repo as compared to the variable in this repo. Due to this, datadog operator was not being installed via gitops adds on from that repo
