Update references to reflect product renaming in workflows and Cfn templates

Description

Following https://github.com/aws-samples/pcluster-manager/pull/499, this PR updates old references to reflect product renaming in both GitHub workflows and Cfn templates.

How Has This Been Tested?

• Manually deployed stacks in test account and emulated workflows
