workshop environment, requirements, and ami updates

Issue #69 and N/A:

• Updated AWS AMI to Rancher Manager v2.7.8, Rancher Kubernetes Engine 2 v1.25.14, and Cert-Manager v1.13.1
  • Tested and verified comparability with the workshop environment on two accounts in us-east-1 and us-west-2
• Updated AWS AMI workflow to increase reliability and upgradability for future updates (view the repo)
• Updated Workshop Requirements to add clarity for users at AWS Events and Outside AWS Events
  • Feedback received from users at the most recent AWS Event
• Minor updates to AWS CloudFormation template to have the same formatting and configuration
  • Linted and formatted (with prettier) CloudFormation template
