Updated workshop to Rancher Manager v2.8.4, RKE2 v1.27.14, and Cert-Manager v1.14.5
- Tested and verified comparability with two accounts in us-east-1 and us-west-2
- Moved AMIs into new a aws account, but no code changes to the build process
Updated the table of contents to fix broken links in the workshop environment
- Issue: #76

I'd want to spin up a test workshop before ok'ing. I feel like the ToC links were built to work only within the workshop env @zackbradys

I feel like I'm remembering that as well now. I rebuilt it to work off of the site... for example:
