While filing new claim, set the "Occurrence Date Time" to 3 days in future by default. Ideally, a policy gets created in the past when onboarding a customer. When the insurer files a claims, the policy creation date would be in the past. In order to mimic that behavior in the demo, you would want the occurrenceDateTime set to a future date.
Setting this date on page load saves time for demo purposes
