Update Amazon Redshift datasource plugin to >= 1.2.0 #28

I would like to request Redshift datasource plugin update to latest version (v1.2.0). Installed plugin version is v1.0.5 which is 4 versions behind as of Sep 27 2022. There are 5+ features, 2 bug fixes that I want to use on Amazon Managed Grafana with Redshift datasource.

As discussed in #15 , it'll be great if users can control the plugin version.
