fix: prepare for 0.1.0 deployment

Description of changes:

• add minor documentation fixes
• remove CHANGELOG.md
  • CHANGELOG.md will get automatically generated with official release
  • current CHANGELOG.md causes a minor bug where a trailing "g" will get appended on the file
• add date_time module to sagemaker_sklearn_extension.feature_extraction
