fix: ddb mapper tests

Fixes DynamoDb Mapper publication by:

• Moving JVM-only dependencies to jvm source set
• Disabling KSP2 due to an issue with subsequent invocations of kspCommonMainKotlinMetadata alternating between success and failure
  • The generated files would alternate between files and directories (?), this issue seems related: https://github.com/google/ksp/issues/1678
  • Commenters in this issue reported setting ksp.incremental=false fixes their problem, but it doesn't here. Only disabling usage of KSP2 fixes compilation
  • Another workaround is to run ./gradlew clean before every invocation of kspCommonMainKotlinMetadata
