♻️ refactoring: from `okp4` to `axone` #747

Through this PR we prepare this repository to welcome Axone networks instead of OKP4.

Details

Old networks under the OKP4 branding stays untouched but considered unmanaged anymore by this repository which in their case serves as a history trace. They are marked as is in the main readme.

All the other elements now respects Axone brand, as well as the CI is prepared to run under the new organization.
