I've only seen this happen when launching more than one story file at once.
Here we're somewhat at the mercy of the Apple APIs - the font loading code
depends on the OS to find the fonts by name. It mostly works but occasionally
does not, if there's a hiccup in whatever Apple subsystem is responsible for
matching fonts.
The main Gargoyle release uses a much older set of APIs, for compatibility with
Tiger, and these aren't quite as reliable under Snow Leopard. I have not seen
this issue in the past nine months, but then I'm always running a locally
compiled x64 build which uses the new 10.6 APIs.
I suspect the ultimate fix will involve abandoning 10.4. I hate to do it, but
it will almost be justifiable once Lion comes out.

The new release will be built under 10.5, so I'm going to tentatively mark this
as resolved with the hope that it clears up.

Just discovered issue 140 , and tried downloading the garglk.ini from the new
sources folder. That seemed to clear things up--it looks like the old font
specifications (as described in issue 140 ) may have been to blame.

Unfortunately, this is now occurring again (using 2011.1). The .ini file seems
to have nothing to do with it. Trashing it and restarting Gargoyle has no
effect, for example.
