[Docs] Updating whole Docs - from Azkfile to Gitbook and plugins versions #606

In order to update Gitbook for a newer version I had to update Azkfile.js and and it's dependencies. Added new plugins such as Sitemaps generator and Hotjar metrics. Also had to update Gulp and AWSPublisher versions because they were unmatching each order.

Note: It now requires azk to run the docs.
