Add doc for phase-1 tx creation

Wonder if we should add any instructions on how to do timelock withdraw (in a different PR), as people might be asking how to get their deposits out after they expire. I guess the guide on this would be phase-2 compliant as well as it's the same transaction. Lower priority.

I agree, we should definitely have a doc for this, I will add a task for it
