#10 symlink files directory up a level to work with Pantheon's requirements #20

I didn't find https://github.com/backdrop-ops/backdrop-pantheon/issues/10 or https://github.com/backdrop-ops/backdrop-pantheon/pull/11 until after I committed this to our upstream. I think this a cleaner solution that the sites/default/files approach.
