torch 1.* -> 2.0.0 #277

Need to bump the torch version, all steps work.

There is an underlying issue with the current version of PyTorch that affects installing via poetry. Furthermore, 2.0.1 also has an issue.

Edit: I ran into this while trying to install via brew, so I'll need to create a new release that solves this issue.
