Fix all doc strings so they appear nicely formatted in text editor

Testing with VSCode. The way the doc strings are written throughout the repo is varied and usually not recognized correctly (ie. the text editor don't do the line breaks, headers, bullet points accurately in the popup hints). This is especially important to get fixed for new users.
