You can define custom properties for resources the same way as for the tasks:
right-click in the resource table header. Is it what you want or you need
exactly "notes" - wide text area?

Right click on the right resource column give me this menu:

New resource
Resource properties
Send an email
Delete resource
up
down
cut
copy
paste

If I click on "Resource properties" I can only add some basic info: name,
phone, mail and role. Then there is a tab with days off.
Well, in this resources properties I need to insert more info: skill, age,
timezone, reliability, and more.

Click in the resource table *header* (any column name), not in the table
itself. Select "manage columns".
It should actually be in the resource properties, though, just like for tasks.
We'll see if we can easily add it in 2.5.

There is custom columns tab in resource properties in GP 2.5. I hope it is okay
