Currently working on Big Sur 11.1 and I had the same problem as you described. Seems like this is indeed a bug which hopefully wil be fixed for iMac Late 2013. In order to get the USB drives working, I would advise you to reset your SMC and then immediately push the alt button in order to get the startup manager. Once you're there select the EFI boot drive that you used for installing the Big Sur 11.1. After this you're iMac will shut down, as described in Readme, and then startup your iMac and select the drive that you use for Big Sur 11.1.
These steps have fixed it for me for now. Although, sometimes I need to reboot my iMac and suddenly it doesn't detect my USB drives anymore. Then I either have to reboot my system or do the SMC reset again.
If this is going to keep on happening, I will reverse the update and install Big Sur 11.0.

USB Devices other than disks seem to no longer work since updating to 11.1 using micropatcher 0.51.
BTW. I had problems installing via patched USB Stick since it says I have to less disc space to install Big Sur 11.1. The more space I created the more the installer said it is needed. At the very last step I disconnected my RAID system. Voila, the disc space was calculated correct and installed. But USB is not working.
Any idea? Or do I have to rollback?
