Need to consult other code, but basic ideas:

Increase "ChunkStack" height, so we have more than one chunk vertically.
As a first step, could just add more of a static chunk type as we walk in a direction.

The second is now working as of d9b35062a939718c419ea7978ae77e739f702ea4, though it is a bit dodgy - chunks don't immediately appear and have more to do with the ray-casting of our view than where we are positioned (which makes a certain sense, but needs to be more robust).
