Adds end-to-end tests for Pay Patient and Pay Practitioner, with slight variations for their CSR routes. This PR only checks for the happy path, but it opens the door for future testing down the road as required. Also adds cypress values to a bunch of the fields so E2E testing can happen.

Approving these also expedites development for anyone working on PPPP, so it's a win on a few levels!
