Update iOS SDK from 16.2 -> 17

Describe the task The SDK (Software Development Kit) in the application needs to be updated from 16.2 -> 17 in order to be published in the App Store.

Purpose No changes to the iOS store can be updated until this is complete

Acceptance Criteria

• [ ] SDK Updated from 16.2 -> 17
• [ ] No breaking changes

Additional context

• This task could be as simple as toggling one number to another
  • It could be plenty of small fixes across the app
  • It could be completely catastrophic
    • There are plenty of unknowns, but likely won't be a major issue
