Also updated bson transitive dependencies with npm "overrides"

Did functional testing locally of both Admin and Public endpoints. Checked for API errors. Will test further on staging environment.

Although this PR looks onerous, the majority of the files that have "changed" have been deleted. If you look at the diff, you'll find that there's not much to actually review except for a few files that have been modified and not deleted
