The existing configurations are extensions on the original OrgBook configurations plus the changes made to the docker compose environment(s) to support the migration to the Aries (Indy-Catalyst) version of the components. Some of the original settings have/may have been left behind, but are no longer used. Make a pass through the configurations and remove any unused environment variables. Update the related docker compose settings at the same time.
