Change the tutorials and docs to amoy testnet #218

with the migration of the polygon testnet, mumbai chain will be deprecated. So we plan to move the docs and tutorial to Amoy testnet. https://polygon.technology/blog/introducing-the-amoy-testnet-for-polygon-pos
