It's currently possible to hide all UI by pressing CmdOrCtrl+Shift+H

Can you elaborate on how vim bindings would work?

CmdOrCtrl+Shift+H does noting 4 me. still have a title bar/tab bar and adressbar.

install vimium on chrome or vimvixen on firefox and have a look for a while.

+1 and I would also strongly support vim mode for the editor. Vim keybindings for browsing are nice, but vim for editing is essential.
