Replace plot_ss() function in Lab 7? #6

More custom, undocumented code. Is this necessary?

Ideally, we'd replace this with some interactive javascript/shiny so it would just run in-browser. But I think for now it's fine. If you wanted to rewrite it in the mosaic syntax (to take a data argument), that might be useful. But otherwise I'd keep it.
