Categorical traces - label ordering #104

Currently the ordering of the labels of a categorical variable are arbitrary. In the plots it would be reasonable to order them alphabetically by default (perhaps with an option of ordered by diminishing frequency).

Ordered categories by frequency so credible sets are coherent.
