I have goals that have 10pm deadlines in the winter. It’s summer and they’ve switched to 11pm deadlines since the clocks are an hour ahead now; at least that’s what the website shows, and I presume that’s the definitive version?
The iOS app is still showing them as having 10pm deadlines, and if you try to enter data for them between 10pm and 11pm it puts the data in for the next day (which would be correct if it was a 10pm deadline, but the website says it’s 11pm.)

showing it with timezone data if necessariy

data entered in the ios app up until 10pm counts as "today"
data entered in the ios app after 10pm counts as "tomorrow"
data entered in the ios app before 11pm counts as "today"
