Add M1 simulator architectures

A number of co-morbid improvements to the Apple build tooling, mostly in aid of supporting M1 simulation hardware:

• Fixes #133: With Apple's move to M1 hardware, we need to be able to support device simulation on M1 hardware.
• Fixes #131: Supporting M1 hardware means we need to correct the flags used to compile the ctypes module.
• Fixes #120: Supporting M1 simulators means there are 2 builds with an arm64 architecture - which can't co-exist in a single fat binary, because they use different SDKs. This requires that we package apps using the new XCFramework packaging structure.
• Fixes #144: Xcode 13.3 introduced a flag to clang that broke all Python builds; bumps Python to 3.10.4.
• Fixes #87: Adds in the arm64_32 architecture for Apple watchOS
• Adds a testbed app that can be used to verify that the support build is complete and correct.
• Adds the ndbm module
• Bumps OpenSSL to 1.1.1o
• Miscellaneous improvements to optimise and streamline the build process
• Added some clarifications about the state of modules to the README
