dump databases into file for proper github sync

when pushing to github & then pulling, database is inaccessible. we must create a dump file for proper github sync

• [x] create dump files

• [x] sync with github

• [x] load from dump files

• [x] check to make sure app works

• [x] update documentation to reflect this process
