I'm running into the same issue. I did a complete reinstall on a new server but can't continue :(
Might be using the root user for compiling be a hint to solve the problem?

I't s a regression in mediasoup build of libuv. You can workaround it by changing version of mediasoup to 3.10.2 or 3.10.3 in mod/webrtc-sfu/bbb-webrtc-sfu/package.json, deleting mod/webrtc-sfu/bbb-webrtc-sfu/package.lock and running build again. ref: https://mediasoup.discourse.group/t/mediasoup-build-fails/4345/6

Sorry, but I can't provide anymore help because I switched to the regular BBB install script :(
There have been many changes within BBB 2.6. This issue has probably also been solved. Please feel free to post again if it should still occur.
I just installed Ubuntu 20.04. I have followed all the steps to install docker and docker-compose, just as I had done on other occasions.
