I'm totally revamping my new in box E5+, has anyone successfully ran one of the above mentioned boards or any of the BTT boards without a TFT screen? My current 5+ is running in my print lab with a big desktop and Pi3b+, I never use the screen on it, I slice in Cura and send the G code directly to the Octoprint. I would like to not buy a screen for my second and highly modified unit if I don't have to.

Not trying to be rude, but GitHub is about programming and development within the context of the repository...the Issues section is a place to discuss that and debugging.

Your question applies to 3D printing in general (regardless of machine or mainboard) and is personal preference, so it is best suited for a forum or YT comment section. Since you never use your current screen, then you answered your own question.
