Fix failing conda-forge PR #10

The tests in the request to add nessai-bilby to conda-forge` are failing due to the tests on Windows and MacOS. This PR includes changes to test on those OSs and ensure the tests pass.

Once this is passing, I will likely make a post release to PyPI and then update the conda-forge PR
