Would it be possible to enlarge the new QR code displayed in the apple wallet?

Unfortuately not, no - Apple Wallet has full control over how it renders the QR code, and we have no say in it. We just hand it the QR code URL (shc:/[lots of numbers]), and it chooses how it displays things on its own.
