You shouldn't have to do anything with Themes once you set it in Qbits settings...that's assuming your config folder is not a volume created by Docker but rather on your OS. I just pulled that repo into the /config/themes that's locally on my OS and Qbit picked it up with no issues.

Would it be possible to include an alternative Web UI in the current Docker?
I found a method to include it myself in the Docker, but then after every update I assume I have to do it again. And do not have the experience to build this myself :-s
