So far all the options I see listed on Choose a Wallet for macOS only support the outdated Apple Intel architecture.
The new architecture uses Apple Silicon ("M1"). And you get warnings when you first install the old software. Installing old software is a quality signal that a project has not kept up-to-date and may have other problems.
So I am requesting that a "supports M1" feature and filter please be added to the choose a wallet section. This will encourage well-maintained, reliable software to be listed on the page.
I think this is a good idea, but it might make sense to wait a while before implementing. M1 is fairly recent and I don't think projects not keeping up to date with it right now is a bad signal necessarily.
