[bitnami/opensearch]: Replace open.co links with opensearch.org #29547

What architecture are you using?

None

What steps will reproduce the bug?

Click the links in the README that lead to open.co and see that the site is broken.

What is the expected behavior?

I expect to end up with the official documentation for OpenSearch.

What do you see instead?

A broken site. I presume it's an old site for OpenSearch.

Additional information

If I can figure out the corresponding pages on the real site, I'll make a PR to fix this.
