Pin dependencies in Conda environment to stable versions #54

Without pinned versions for dependencies, we can get unstable Conda environments where, for example, altair saver just doesn't work anymore. We need to pin all major dependencies to versions that we know work, to avoid this issue and improve reproducibility for the future.
