Update to Cardano Node 8.7.3

[ ] cardano-node v8.7.3-3 (includes path changes for config files/topology/etc.)
[ ] ogmios v6.0.3
[ ] kupo v2.8.0

I switched this to use 8.9.1, since it's the latest version suitable for mainnet.
