Document which endpoints are implemented in ryo #289

It's not obvious without digging through the openapi and https://github.com/blockfrost/blockfrost-backend-ryo/tree/master/src/routes

As well as https://github.com/blockfrost/blockfrost-backend-ryo/issues/38, I recently noticed there's no mempool and tx submission endpoint here

Are there any other cases, and how are they implemented? It feels a little dishonest to claim this to be an alternative for the public Blockfrost instances, but not mirror the API

Thank you, this is a good point, we will add it to the openapi package as tags to designate which are only available on hosted.

These submit/EvaluateTx endpoints that are not in RYO, as they are just access proxy to other open source tools build by different parties (cardano-submit-api, Ogmios, IPFS...). It would be useful to document how to setup these as one cluster. We are open to contributions to the documentation.
