7opf sof custom scope key #194

allows configuration of a custom scope key in sof scope middleware for tokens that have permissions in a different claim (e.g. permissions claim). Updated docs too.

@Robert-W just had a thought that it may not be clear in the documentation that this option pertains only to smart auth scopes. You guys will have better oversight on this to judge what might be the best way to document it.

Thanks for submitting this, looks good to me. I'l poke the team when they are all in today and see if anyone has any objections and if we can't get a new release out.
