We have this knife which is his next step up from the ones he has (sharp but encourages the index finger away from the blade):

I agree it seems a good time to transition him to it but it needs to be kept out of his reach so he can't go for it independently - it's sharp and he could hurt someone or do some serious damage (running with it for example when he gets excited and all good practices are forgotten).
Currently in the bottom left hand side drawer by the oven ' hidden' in its packaging.
Our 3-year old really likes helping in the kitchen. He often asks to help with chopping fruit & veg. His current "knife" is more of a blunt edge that only works on soft fruits like banana. 🍌
I propose we get him a "real" child-friendly chefs knife:
