Seed a bunch of documents for each course #83

Description of the issue:

Add in documents + submissions of quizzes / exams / and assignments for each course so that our demo is nice and we have data to manipulate

Documents should have a type added to them ideally before doing all this seeding, but i'll start gathering a bunch now to quickly past in when that's added

Added some seeded document code. Still need to add more documents to more courses and submissions.

added a ton of documents of all types for physics and chem 1 and 2. chem 1 and 2 are are really a copy of one another.

have submissions ready to be entered alongside them once the submissions model and controller are completed.
